L'origine di tal cognominizzazione, al dir di illustri genealogisti, andrebbe ricercata in un patronimico del nome medioevale "Sabbatinus". In ogni modo, tal casato risulta fregiato dei titoli di principe di Santa Margherita e di barone di Martini.
