Caudera is specific of Turin, of Ciriè above all and of Turin, San Carlo Canavese and Chivasso, it should derive from a nickname based on the dialectal term Vercelli, and not only, caudèra (boiler with which the cheese is prepared, but also an instrument that serves to distil the pomace to make grappa).
