Cavatai is unique, probably due to an incorrect transcription of Cavataio, which is typical of western Sicily, of Cinisi, Palermo, Terrasini and Balestrate in the Palermo area and of Alcamo and Mazara del Vallo in the Trapani area, and which should derive from the work of quarryman of salt or sulfur, carried out by the founders.
