Il casato era noto in Tortona sin dal V secolo per una torre designata col loro nome ed edificata con altre nell'anno 407 onde rafforzare quelle preesistenti, tra cui l'antichissima Torre Rossa detta anche Tarquinia, tutte collegate dalle mura che, inerpicandosi dal borgo serpeggiavano per i colli circuendo la città; quella dei Carofoli, situata in fondo alla contrada dei Fabbri presso l'abitazione di Uberto Calderari, pare fosse ancora efficiente nell'XI secolo; in epoca di poco posteriore i Carofoli risultano pure presenti nella vicina repubblica genovese poichè in un decreto dei Consoli del novembre 1133 relativo a misure e norme per l'edilizia stradale figurano, tra gli altri, dei Carofoli; ciò potrebbe giustificare la loro assenza da Tortona, dato il silenzio delle cronache sulla famiglia durante l'assedio del Barbarossa nel 1155, ed un successivo rimpatrio; nel trattato di pace del 15 marzo 1174 la rep. di Genova ed i Malaspina, ove gli
