Famiglia pugliese, stabilita a Roma fino dal XVI secolo. Luca Antonio fu Conservatore nel 1637 ed Carlo Eustachi lo fu nel 1663. Il 1° fu Cameriere segreto di Papa Paolo V. Questa famiglia è diversa da quella marchegiana degli Eustachi che fioriva a Roma nel XVI secolo. Un Bartolomeo da San Severino nella diocesi di Camerino fece testamento a Roma con i rogiti di Curzio Saccocci notaio romano il 1 luglio 1570. Gli Eustachi furono compresi nella bolla benedettina. Altra famiglia. Antica famiglia dell'Emilia Romagna nobile in Cesena e, probabilmente, imparentata con quella nobile in Roma.
