La famiglia è originaria dal Castello di Sabbione, Castrum Sabloni, nel distretto di Cologna, venduto nel 10 aprile 968 da Garimberto arcidiacono di Verona ad Ambrogio di Vicenza. E appunto Fridigello da Sabbione si trova citato in un documento di alleanza del 10 gugno 1180 tra padovani, coneglienesi e quei di Ceneda. Più tardi (1409) troviamo questa famiglia ascritta al nobile Consiglio di Verona nella persona del notaio Bartolomeo Dal Sabbione, Bartholomeus Sabloni; un Cristoforo de Sabioni era notaio e cancelliere del comune di Verona nel 1517. Da Verona i Sabbioni si stabilirono, forse nel principio del secolo XVI, a Cologna ove in virtù delle loro tradizioni nobiliari occuparono, tra il 1468 e 1720, più volte le cariche di Sindaci o Provveditori di questa città, come risulta dal seguente elenco: 1468 Sabioni de' Spingardi Gio. Franco (i Spingardi, famiglia di Cologna, erano nel 1384 ascritti nella nobiltà di Zara), 1470
