Ancienne et très noble famille d'origine espagnole, installée sur l'île de Malte avant même qu'elle ne soit soumise à la domination des Chevaliers de Saint-Jean de Jérusalem, qui s'est répandue au cours des siècles dans diverses régions d'Italie et du monde. Les membres de cette famille avaient des positions et des fonctions éminentes, ils ont servi l'Ordre Gerosolimitano avec talent et fidélité et beaucoup se sont distingués au combat, pour défendre l'île contre les Turcs. Publio-Maria Sant fut le premier évêque de Lavada, puis de Malte et enfin archevêque de Rhodes. Par Frédéric d'Aragon, roi de Sicile, avec un diplôme du 12 novembre 1372, les Sant furent déclarés barons de Gariescem et de Tabia ; fiefs confirmés par le Grand Maître de l'Ordre Gerosolimitano Lascaris de Castellar, le 1er avril 1638. Sa Majesté l'Impératrice Maria-Teresa, avec un diplôme le 30 mars 1768, les nomma barons Fournier de Pausier pour l'Empire
