Originari da Vitolino, da cui presero poi il cognome, furono, per provvisione della Signoria del 28 giugno 1441, ascritti alla cittadinanza fiorentina, in persona di ser Cristoforo, di Piero, di Domenico. Ser Cristoforo ebbe due figli: ser Antonio, notaio della Signoria, e gonfaloniere di giustizia nel 1480; e Piero. Furono i discendenti di quest'ultimo che con decreto 20 giugno 1803 ottennero l'ascrizione la patriziato fiorentino. La famiglia è iscritta nell'Elenco Ufficiale Nobiliare Italiano col titolo di patrizio di Firenze (mf.), in persona dei discendenti da Giuseppe, di Giovanni. Nel corso dei secoli famiglie omonime della stessa si trasferirono in varie regioni d'Italia, donde ne acquisirono la nobiltà e vi furono accolti nelle importanti cariche della città dove ebbero dimora, una di esse ebbe per arma: Partito d'argento e di nero a tre crescenti montanti posti in palo dell'uno all'altro.
