Bossero, now almost disappeared in Italy, should be originally from Boissano in the Savona area, it should derive from a nickname originated from the French medieval term, of Breton origins, bosser (butcher), a dialectal form of the French boucher (always butcher), thus probably indicating occupation of the progenitor.
